Gluten Free Peach Cobbler | Easy Dessert Recipe

A gluten free peach cobbler I made a few days ago. ?

Growing up in Canada, cobbler was such a summer classic (especially the blueberry kind which is by far the best in my opinion) but it’s something that completely slipped out of my culinary radar after moving to the UK. So since I had a bunch of very ripe peaches about to go off, I decided to make a peach version.

As desserts go, it’s probably one of the easiest things to make gluten free. It’s such a simple recipe and the topping takes seconds to whip up. It’s not that sweet either so it can easily double up as breakfast as well. If you’ve never tried cobbler (as it doesn’t seem as popular here) or it’s something you miss, it’s definitely worth a try. ?

P.S.: You HAVE to serve it warm with a lot of cold fresh cream or ice cream on top, it just completes it so well. ?

How to make a gluten free peach cobbler; a super simple and easy classic dessert (or breakfast) that takes just a few minutes to whip up.

Ingredients
For the fruit filling:
  • 4 peaches (415g)
  • 40g granulated sugar
  • 20g unsalted butter
  • 2-4 Tbsp lemon juice
  • 1 tsp cornflour (or xanthan gum)
For the topping:
  • 150g self-raising gluten free flour blend (I used Doves Farm)
  • 120g whole milk
  • 30g unsalted butter
  • 15g sugar
  • 60g applesauce

Directions

  1. FOR THE FILLING: Cut the peaches into slices and place them in a saucepan along with the sugar, butter, lemon juice and cornflour. Turn the heat up to low and cook, stirring constantly, until the butter has melted and the sugar and flour have completely dissolved. Then pour the content into a baking dish.
  2. FOR THE TOPPING: Add all the topping ingredients into a bowl (note: melt the butter in the microwave first) and whisk until you have a smooth, lump free batter.
  3. Spread the batter evenly on top of the peach slices.
  4. Bake on the middle shelf of a pre-heated oven (220C/425F) for about 35 minutes or until the peach cobbler turns a nice golden brown colour.
  5. Serve warm with ice cream or a good drizzle of fresh cream. ?
