Gluten Free Low Flour Peanut Butter Cookies

Deliciously chewy, but crunchy on the outside, these gluten free peanut butter cookies are so easy to whip up, made with very little flour and 100% crunchy peanut butter.

Made into ice cream sandwiches with Carte D’Or Honeycomb ice cream and Waitrose sugar stars sprinkles. ♥︎ Random tip: quickly shape up the filling by squishing the ice cream into a cookie cutter with a spoon. Then quickly wrap up (in cling film/foil) and immediately store in the freezer).

Super easy gluten free and low flour peanut butter cookies.

Ingredients
  • 1 egg
  • 130g crunchy peanut butter (I used this one from Morrisons which is 100% peanuts)
  • 100g sugar
  • 15g (about 2 Tbsp) self-raising flour (I use gluten free Doves Farm )
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
Notes
Cooking temperature: 180C (350F)
Optional: let the cookie dough rest for 10 minutes

Directions

  1. Pre-heat the oven to 180C (350F) and line a baking tray with parchment paper.
  2. Combine all ingredients in a bowl, mix until you reach a smooth dough and set aside for at least 10 minutes or so. This allows the dry ingredients to absorb the liquids and produces a better texture.
  3. Take one tablespoon worth of dough, roll it between your palms gently until smooth and flatten it on the baking tray. Repeat with the rest of the dough, leaving a bit of space in between each cookie to allow for a bit of spreading.
  4. Bake for 10 to 12 minutes.
  5. Take the peanut butter cookies out of the oven and let them cool down completely. Note: they will be quite gooey at first, but will harden as they cool.

  1. I just want to say thank you for this recipe.Yours are just perfect, crunchy on the outside and soft in the middle. I only had smooth peanut butter but worked amazingly! I have been looking for good gluten free cookies as ones from the shop are either too sweet, too salty, dry and expensive. I’m going to check out your other recipes tomorrow and get making my own cookies way more often. You are a saviour!
