Low Carb Coconut Crepes {gluten free}

Today’s recipe: gluten free low carb coconut crepes! If you’ve seen my healthy coconut waffle post from a few months back {recipe here}, then these are essentially the same, but in crepes form; both sweet and savoury.

If you love crepes and pancakes and have come to terms with the fact that you probably shouldn’t eat them every day, then this is a healthier alternative that’s worth a try for sure. I came up with this recipe while I was on a low carb diet and although I’m not anymore, I don’t even care. I love making these simply because of how yummy they are! The health aspect is just an added benefit.

They’re mainly made with yoghurt, eggs, desiccated coconut and a minimal amount of flour. Sounds weird? Not crepe-like at all? Well you’re probably right, but trust me it works!

Healthy and gluten free low carb crepes made with a blend of desiccated coconut, yoghurt and a minimal amount of flour.

Serves: 7 crepes
Ingredients
  • 3 eggs (140g)
  • 20g (2-3 Tbsp) unsweetened desiccated coconut
  • 25g (2-3 Tbsp) sugar (omit if making savoury crepes)
  • 40g (3 Tbsp) unsalted butter
  • 75g (5 Tbsp) plain full fat Greek-style yoghurt
  • 45g (5-6 Tbsp) flour (I used Doves Farm self-raising gluten free flour blend)
  • Pinch of salt
  • Cooking oil (I use Fry Light Olive Oil Spray)
Optional:
  • 1 tsp vanilla extract
  • A few drops of coconut natural flavouring (for an extra coconutty flavour)
Notes
Cooking time: 3 to 4 minutes per crepes
Optional: rest the batter for 15-20 mins. This allows the flour to absorb the liquid and produces a better texture.
If using a plain flour blend, add 1 tsp baking powder.

Directions

  1. Melt the butter in the microwave in 10 seconds increments, stirring in between each, until the butter has fully melted.
  2. Combine with the rest of the ingredients and mix well.
  3. Let the batter rest for at least 15-20 minutes. This allows the flour to absorb the liquid and produces a better, softer texture.
  4. Heat up some oil or cooking spray in a frying pan on low/very low heat. I use Fry Light olive oil spray which is only 1 calorie per spray and does an amazing job at preventing sticking.
  5. Pour a small amount of batter and spread it thinly by angling the pan in a circular motion.
  6. Cook each crepe for 3 to 4 minutes, flipping them mid way through. Note: allow the pan to cool down a bit between each crepe and add more cooking spray.
